Donati is a small, family-owned winery that sits in the center of Paso Robles, California. Ron Donati and his three sons moved to Paso Robles from San Francisco and bought the vineyard in 1998. Their unoaked chardonnay is made in 100% stainless steel tanks. Most chardonnay wines on the market are made with some form of oak aging, whether that’s large oak barrels or oak chips. Being able to successfully make an unoaked chardonnay means you are starting with very high- quality fruit. Oak, while it can add delicious flavor and complexity to wines, it is also very good at hiding faults in wine. Displeasing tastes and aromas that can come from inadequate farming and/or wine making procedures can be overpowered and dramatically lessened by adding a significant amount of oak flavor to the wine. Without the strong flavors of butter, vanilla, and clove, the grapes must rely simply on their wits to give the drinker a pleasurable experience.
Donati Unoaked Chardonnay has no problem showing you exactly how chardonnay grapes taste without the oaky, buttery flavors. The wine is clean and crisps on the palate, showing flavors of green apples, citrus, and tropical fruits. The finish loiters in your mouth while the back of your tongue itches for another sip.
