Cavazza Bocara Trio

Like Soave, Gambellara is a DOC in Italy’s Veneto. Like Soave, it uses the Garganega grape. Like Soave, the soil is volcanic in origin. But unlike Soave, Gambellara’s soil is almost pure basalt, giving its wines greater ripeness and density.

Cavazza’s Gambellara Bocara is bright green-gold in color, with a nose of peach, elderflower, and fresh hay. The palate is all honeydew melon and white peach, with just a hint of citrus rind. The finish is a pure blast of mineral with grace notes of bitter almond. On a hot summer night, it’s like liquid AC.
