La Perla del Priorat is one of Spain's oldest wineries. It was founded by the Carthusian monks of Scala Dei in the fifteenth century. Located just 40 km from the Mediterranean, on the south slops of a hill with a high concentration of Priorat's famous llicorella soil. Llicorella, a porous schist high in iron content, combines with the native Garnacha and Carinena to create the rich, layered, voluptuous fruit that makes Priorat so delicious. Templari, named for Spain's Knights Templar, is a blend of very old-vine Garnacha and Carinena, with a dash of Cabernet and Syrah. The vines' yield is tiny, and they use only free run juice. The result is an opulently perfumed, rich paean to hedonism, bursting with black cherry jam, blackcurrant, fig, tobacco, and spice.cinnamon, vanilla, a little whiff of incense....this wine is practically a religious experience.
