Marques de Olivara harnesses the deep, juicy flavor of a traditional Toro, which they call the 'soul of our terroir' but endeavor to tame it a bit with 14 months' aging in new French oak. The result is a softer, silkier wine with all the power of a traditional Toro, but more grace and elegance. Dusty plum and black cherry flavors, with notes of licorice, spice, and warm vanilla oak. Sweet, soft tannins and a long, supple finish. More of a thoroughbred stallion than a bull. Perfect for the chill of a cold winter night. Perfect, period.
